Agar Agar (E406) is a natural hydrocolloid extracted from red seaweed (Gelidium, Gracilaria species) known for forming firm, thermo-reversible gels with high clarity and stability. It is widely used in confectionery, bakery glazes, dairy desserts, plant-based gels, and molecular gastronomy.
Agar Agar sets at around 35–40°C and melts at 80–90°C, allowing unique textural applications not possible with gelatin. It is vegan, non-GMO, and gluten-free, making it a perfect choice for plant-based formulations.
